Thai Green Curry Superfood Soup

I love Thai green curry ANYTHING. You could simmer dog kibble in Thai green curry sauce and I’d happily eat it. Last time I ordered Thai green curry chicken at a restaurant, I used a spoon to slurp up every last drop of the outrageously delicious sauce. That’s when it dawned on me that a green curry soup would be easy to make and taste totally Thai-rific.
